Every year the Accademia chooses a theme, consisting in one of the basic products of Italian cuisine, which is particularly significant from a gastronomical, cultural and symbolic point of view, and to which every Delegation dedicates one convivial assembly. The aim is to promote the use of this product, to deepen the knowledge about it, and to discover all the varieties of its preparation in the kitchen. The theme for 2017 is “Cheese in regional culinary traditions”. Its purpose is to highlight an ingredient which is abundant in Italy and is an essential or important element in various traditional regional recipes, but can also be used innovatively.

The event is organized in the framework of "Bellissima Italia", a yearly festival coordinated by the Consulate General of Italy and dedicated to the promotion of Italian culture, lifestyle, and iconic Made in Italy products. Under “Bellissima Italia”, a registered trademark in accordance with the Hong Kong law, the Consulate is gathering different events organized by public entities and private companies, in order to increase the awareness of Italy in Hong Kong and Macao.
